Patties Party Sausage Rolls with Roasted Sweet Potato and Goat Cheese Quinoa Salad

Serves 12 
Ingredients

48 Patties Party Sausage Rolls 

6 large sweet potatoes, peeled and cut into 5cm cubes 

2 red onions, cut into wedges 

125ml olive oil 

4 cups cooked quinoa, cooled  

280g baby spinach leaves 

1 ½ cups toasted flaked almonds 

1 small bunch of dill, chopped 

220g goat cheese, crumbled 

Avrils from 2 pomegranate  

Sea salt and freshly cracked black pepper 

 

DRESSING 

125ml light olive oil 

4 tbsp balsamic vinegar 

Juice of 1 lemon 

2 cloves garlic, crushed 

1 tbsp maple syrup  

Sea salt and freshly cracked black pepper 

Instructions

Preheat oven to 200ºC.  Line 2 large baking trays with baking paper.  Toss sweet potato with 2/3 of the olive oil and red onion with the remaining oil (keep them separated).  Season sweet potato and onion with salt and pepper, spread sweet potato only over the trays, roast for 25 mins, then add red onion and roast for a further 15-20 mins until both are soft and caramelised.  Allow to cool slightly. 

To make dressing combine all ingredients in a clean jar and shake well. 

In a large bowl combine quinoa, baby spinach, almonds and dill – gently toss to combine.  Add roasted sweet potato and onion, toss and arrange on a large serving platter.  Drizzle with dressing, then top with crumbled goat cheese and pomegranate avrils. 

Cook Patties Party Sausage Rolls according to packet instructions and serve with the salad.
