Leader Camembert Bites Salad

Serves 12 

36 Leader Camembert Bites 

2 large bunches watercress, leaves picked  

1 Canary melon, thinly shaved 

24 slices prosciutto 

2 tbsp hemp seeds 

65g dried cranberries 



150g fresh or frozen cherries, pitted 

30ml light olive oil 

30ml balsamic vinegar 

1 tbsp lemon juice 

Sea salt and freshly cracked black pepper 


To make the dressing, place pitted cherries in a small saucepan over medium heat until they are bursting (about 5-8 mins).  Remove from heat, set aside to cool.   

Add cherries to a food processor with olive oil, balsamic vinegar and lemon juice, season with sea salt and pepper then blitz until combined – it’s OK if this is still a bit chunky, it doesn’t need to be perfectly smooth!   


Prepare Leader Camembert Bites according to packet instructions. 


Arrange watercress on a large serving platter, drizzle over the cherry balsamic dressing.  Arrange Camembert Bites evenly, then randomly tuck in shaved melon and prosciutto.  Sprinkle over hemp seeds and dried cranberries, to serve.
