Boscastle Aussie Pie with Buttered BBQ Corn and Macadamia Dukkah

Ingredients

 

2 x Boscastle Aussie Pies

2 cobs of corn, in husks

Butter

MACADAMIA DUKKAH

60g roasted macadamias, roughly chopped

½ tsp ground lemon myrtle

½ tsp ground cumin

½ tsp ground coriander

¼ tsp chilli flakes

Sea salt and freshly ground black pepper

Instructions

Preheat a BBQ grill to HIGH.

To make macadamia dukkah, combine all ingredients in a snap lock bag, season and shake well.

Cook Boscastle Aussie Pies according to packet instructions. 

Meanwhile, peel husks off the corn and tie back.  Grill corn for 10-15 mins, turning every few minutes, until charred.

Rub butter all over the corn and sprinkle with macadamia dukkah before serving with pies.
