Nanna’s Family Apple Pie with Torched Meringue and Summer Berries

Serves 6-8 
Ingredients

 1 Nanna’s Family Apple Pie 

90g egg whites (from about 3 extra-large eggs) 

150g caster sugar 

2 cups mixed berries (we used raspberries, blueberries, blackberries and cherries) 

Edible silver leaf, to decorate 

Instructions

 Prepare Nanna’s Family Apple Pie according to packet instructions.   

To make the meringue, combine egg whites and caster sugar in a heatproof bowl, place over a small saucepan of simmering water, ensuring the bottom of the bowl doesn’t come into contact with the water.  Stir constantly until the sugar has dissolved (if you rub some of the mixture between your fingers it will no longer feel gritty). 

Transfer the mixture to a stand mixer and whisk on HIGH until stiff peaks form.  Transfer the mixture to a piping bag fitted with a large star nozzle.  Pipe around the border of the prepared pie, use a blowtorch to toast the meringue. 

Arrange fresh berries in the centre and decorate with edible silver leaf, to serve.
