7 Star Spinach and Ricotta Lasagne with Fig and Blue Cheese Salad

Serves 8 
Ingredients

 1 x 2.1kg Spinach and Ricotta Lasagne 

400g baby spinach leaves 

4 French shallots, thinly sliced 

16 small figs, halved 

150g firm blue cheese, crumbled 

DRESSING 

1 lemon, juiced 

1 tbsp Dijon mustard 

60ml extra virgin olive oil  

Sea salt and freshly cracked black pepper 

Instructions

Combine spinach and shallots in a large bowl, toss to combine.  Whisk together dressing ingredients, drizzle over the leaves and toss to coat.  Arrange on a large serving plate. 

Tuck the figs into the leaves, scatter over crumbled blue cheese, to serve.
