7 Star Premium Beef Lasagne with Rustic Italian Tomato, Bean and Potato Salad

Makes 10 serves
Ingredients

1 x 2.6kg Premium Beef Lasagne  

1kg baby potatoes  

450g green beans, trimmed 

125ml extra virgin olive oil 

60ml balsamic vinegar 

600g cherry tomatoes 

200g mixed pitted olives 

1 red onion, thinly sliced 

50g baby capers, drained 

1 bunch basil, leaves picked 

½ bunch flat-leaf parsley, leaves picked 

Sea salt and freshly cracked black pepper 

Instructions

Boil potatoes in salted water until tender.  Drain and cool slightly, then cut into halves. 

Boil beans in salted water until crisp-tender, drain and then add to an ice bath to rapidly cool.  Drain. 

 

To make the dressing, whisk together olive oil and vinegar, season.  Arrange all ingredients on a platter and drizzle with dressing to serve.
