Patties Party Pies with Marinated Mushrooms

Serves 24 

You will need to begin this recipe at least 2 days before (marinated mushrooms can be stored in the fridge for up to 2 weeks) 


48 Patties Party Pies 

220g shimeji mushrooms, separated into individual stems 

125ml dry white wine 

1 ½ tbsp caster sugar 

½ tsp whole black peppercorns   

½ tsp sea salt   

½ tsp coriander seed 

1 bay leaf 

2 cloves garlic, crushed 

2 tbsp extra virgin olive oil 

3 sprigs thyme  


Combine mushrooms, wine, 60ml water, sugar, salt, bay leaf, garlic and olive oil in a saucepan.  Add peppercorns and coriander seeds to a small piece of muslin cloth and tie tightly to enclose.  Add to the saucepan. 

Bring the ingredients to a gentle boil then reduce heat and simmer for 5 mins, stirring often.  

Allow mushrooms to cool then transfer to a sterilised jar, pack in the thyme sprigs and close the lid.  Allow to marinate in the refrigerator for at least 2 days before serving with prepared Patties Party Pies.
