Clever Cuisines Beef Jus with Reverse Sear Rib Eye

Serves 1 

This recipe will give extra jus for multiple serves 


1 x 1kg Clever Cuisines Beef Jus  

3cm thick rib eye steak 

1 tsp sea salt flakes 

1 tsp freshly cracked black pepper 

3 tbsp grapeseed oil 

2 tbsp butter 

2 cloves garlic, smashed 

2 sprigs rosemary 

3 sprigs thyme 


Preheat oven to 200ºC. 

Dry steak very well, season all over with salt and pepper.  

Place a wire rack over a baking tray, place steak on top and roast for 45-60 mins until internal temperature reaches 50ºC.   

Heat oil in a large pan over high heat, add steak and cook for 2 minutes, flipping half way.  Reduce heat to low, add butter, garlic, rosemary and thyme and swirl the pan.  Move the garlic and herbs to the top of the steak and spoon over the butter continuously for 1 minute.  Flip the steak and repeat. 

Prepare Clever Cuisines Beef Jus according to packet instructions and serve in a pouring jug with the steak.
