Prepare Boscastle Gourmet Beef Rolls according to packet instructions.
While the sausage rolls are cooking, melt butter in a medium saucepan then add flour and stir over a medium heat until nutty. Reduce heat to low. In a small jug, combine milk and cream then slowly pour into the flour mixture, whisking constantly until completely added, then continue to whisk over low heat for a further 2 mins to allow the mixture to thicken slightly.
Add beer, Worcestershire sauce, Dijon and spices and whisk to combine then add grated Manchego and stir until the cheese is melted. Remove from heat then pour into a serving bowl, sprinkle with diced jalapeno and serve with the sausage rolls.
